This refined sugar and gluten free Healthy & Raw Snickers Bar Slice was a serious hit when served in Sydney recently for our beautiful Red Balloon Mother's Day event. Maybe your Mum would love a healthy treat too this Mother's Day...? Hint hint :)
You will need:
2 cups fresh dates, pitted
1/4 cup natural almond butter
1/4 cup natural peanut butter
1 teaspoon vanilla extract
1 1/4 cup buckwheat
1 cup unsalted roasted peanuts OR roasted almonds, roughly chopped
Pinch Celtic sea salt
For the chocolate topping:
1/4 cup coconut oil, melted
1/4 cup raw cacao powder
1 tablespoon maple syrup or rice malt syrup
Line a loaf tin with baking paper. Place the dates, almond butter, peanut butter and vanilla into a high powered food processor and combine until smooth.
Turn the date paste into a mixing bowl and fold in the buckwheat, chopped nuts and sea salt. Use the back of a spoon or your fingers to press into the prepared loaf tin. Place in the fridge to set.
To make the chocolate, combine the melted coconut oil, cacao and sweetener in a small bowl, stirring vigourously until smooth. Pour onto the chilled base, sprinkle with more chopped nuts and return to the fridge. Allow to set for two hours before serving.
Tip: dip a sharp knife into hot water to cut this slice - it will help to ensure the chocolate layer does not crack.
