Thank you to all who have requested that we share this recipe, made most recently for the beautiful guests of our Urban Retreat. We agree! They are certainly one for the work lunchbox!
Free from refined sugar, these cookies can also be made gluten free if you are able to source oats processed in a wheat free facility (keep an eye out for Bobs Red Mill at your local health food store).
A healthy swap for the traditional choc chip cookie. Hope you enjoy.
You will need:
1 cup oats
1/2 cup desiccated coconut
1/2 cup rice flour
1/2 cup coconut sugar
1/2 cup almond butter
1/3 cup coconut oil, softened
1/4 cup water
1/4 cup currants
1/4 cup cacao nibs
3 tablespoons flax seeds
1 teaspoon baking powder
Pinch Celtic sea salt
Preheat your ovent to 180C and line a baking tray with baking paper.
In a small mixing bowl, combine the almond butter, coconut oil, water, coconut sugar and flax seeds. Set aside for 5 minutes (the flax seeds will thicken the liquid mixture and this will aid in holding the cookies together).
Into a large mixing bowl place all remaining dry ingredients. Stir the wet mix into the dry mixture, using a wooden spoon and your hands.
Use a tablespoon to form balls of approximately 2cm diameter and place on the preprared baking tray. Use the back of a fork to press down, smoothing the sides of the cookies with your fingers if they crack.
Place into the preheated oven for 12 minutes or until golden. Keep your eye on them as they will burn.
Keep stored in an airtight container in the pantry. Suitable to freeze.
