Fuelling peak performance: Fudgy Sweet Potato Brownies


It's a happy day when you can hide great nutrition, brain power, focus and satiety beneath a generous serving of chocolate!! Today is that day people :) because these seemingly decadent Fudgy Sweet Potato Brownies with Chocolate Avocado Frosting have been designed with your peak performance at work in mind.

The healthy carbohydrates of the sweet potato will keep you out of the lolly jar and feeling full; the eggs (packed with protein and B12) will super charge your mind, your memory and your focus too, and the cacao serves to increase certain neurotransmitters in your brain, promoting a sense of wellbeing and boosting your mood.

For the brownies

120 grams sweet potato, peeled
1 cup almond meal
1/2 cup raw cacao powder
2/3 cup coconut oil, melted
1/3 cup raw honey or maple syrup
4 eggs
2 teaspoons pure vanilla extract

For the chocolate frosting:

1 perfectly ripe avocado
1/2 cup raw cacao
1/2 cup maple syrup
Macadamia's (or other nut) to garnish

Cut the sweet potato into 2cm chunks and place in a steamer over medium heat with the lid on. Steam for 20 minutes or until a knife inserted in the sweet potato shows it is soft. Place the sweet potato in a high-speed blender and puree until smooth. Allow to cool slightly.

Preheat your oven to 180 degrees C. Line a 20cm x 20cm baking pan with baking paper.

In a large mixing bowl, place the eggs and sweetener of choice and whisk with a fork. Add the coconut oil and stir. Gently fold in the sweet potato, almond meal, cacao and vanilla.

Pour the combined batter into prepared baking pan and bake for 25 minutes. Be careful not to overcook. Brownies will be firm on the outside but still soft and fudgy in the middle. Remove from oven and allow to cool.

To make the chocolate frosting, combine the avocado, cacao and sweetener in a high-speed blender until the avocado is completely smooth. Layer on top of brownies with the back of a spoon and garnish with nuts. Slice and serve! 

To make a kids lunchbox friendly version, you can definitely omit the frosting - brownies are still absolutely delicious without it!
