Fuelling Peak Performance: Five Seed Lunchbox Bars

Given we are on a mission this week to fill your work lunchboxes with nourishing foods that will fuel your body & mind for peak performance, behold the answer to the 3pm energy dip. A macronutrient balanced bar that is free of nuts yet brimming with healthy proteins and fats. This bar will re-ignite your inspiration at work when you are feeling a bit flat, we find it's best served with some fresh air and a brisk walking meeting around the block!

Makes 12 bars

You will need:

1 cup pumpkin seeds
1 cup dried shredded coconut
1/2 cup sesame seeds
1/2 cup sunflower seeds
4 tbs chia seeds
20 fresh medjool dates, pitted
6 tbsp coconut oil, room temperature
4 tbsp raw cacao powder
1 whole vanilla bean, cut into pieces (including the pod) or 1 teaspoon vanilla extract
2 tbsp poppy seeds

1. Combine the dates, coconut oil, vanilla and cacao in a high-speed blender until a smooth paste forms.

2. Place all dry ingredients in a large mixing bowl, fold in the date paste – you may need to use your hands to combine.

3. Press into a 20cm x 20cm baking tray lined with glad wrap. Place in the fridge to set for 1 hour. Remove and cut into bars.
